On January 25th, 2013 Denise Perrier sang at the legendary Tip bar in San Francisco. Ms. Perrier has received great critical acclaim and is widely appreciated both here in the States and internationally, particularly in Russia. In honor of the occasion, we created a cocktail to serve to the thirsty fans in attendance.
The spirit in this drink is vodka, in homage to Ms. Perrier’s Russian popularity. But the drink’s spirit comes from her distinction as “the voice with a heart.” The Cava Cava and cider vinegar shrub sings when mixed with effervescent Perrier; the heart is sweet maraschino.
The Voice and the Heart
1 oz vodka
1 oz Cava Cava-apple cider vinegar shrub*
Top with Perrier
Add vodka followed by shrub and stir. Top with mineral water and garnish with a Luxardo maraschino cherry.
Cava Cava shrub
Dissolve one part sugar in one part fresh-squeezed orange juice. This will take about an hour with occasional stirring. Once all the sugar granuals are gone, strain and add a little more than one part apple cider vinegar. I found it needed a little extra acid to cut the sweetness. That’s it!
